Air-Fried Pesto Chicken Sandwich & Green Apple Cranberry Salad with Chicken

During the summer months, I typically try to turn to items that can be prepared quickly and don’t heat up the house. My family and I are veggie lovers, so we tend to gravitate towards sandwiches, salads, and wraps since they provide opportunity for variety with ease. I find it helpful to plan out my meals for the week, which helps with saving money and saving time. While I enjoy cooking, I strive to be efficient with my time in the kitchen. With that being said, below I share with you some of my go-to recipes for flavorful, yet simple meals during the busy weeks!

Air-Fried Pesto Chicken Sandwich

  • Serves: 1

Ingredients:

2 slices toasted whole grain bread 

1 slice Havarti cheese

1 thick slice Hot House or Beefsteak tomato

1 air-fried boneless/skinless chicken thigh (I like to season w/ 2 Gringo’s Chupacabra Cluckalicious Rub prior to cooking)

1 handful spinach

Pesto spread

¼ cup light olive oil mayo

~1.5 tsp pesto sauce powder mix

Directions:

  1. Spread a thin layer of pesto spread onto the toast. Place the following on the toast: air-fried chicken, cheese, spinach, and tomato. Pair with some fruit and ENJOY!
 

Green Apple Cranberry Salad with Chicken

  • Serves: 1

Ingredients:

  • 2 large handfuls spinach (I like to chop/shred this)
    ½ large or 1 small Granny Smith apple chopped (this adds to the tartness, but can be swapped for another type of apple if desired)
    1 ½ Tbsp craisins
    1 air-fried boneless/skinless chicken thigh (I like to season w/ 2 Gringo’s Chupacabra Cluckalicious Rub prior to cooking)
    Sprinkle feta or goat cheese (any cheese will work, but I have found the softer cheeses taste best with this salad)
    1 serving P.F. Chang’s Signature Vinaigrette (add more to taste as desired)

Directions:

  1. In a salad bowl, mix spinach, apple, craisins. Top with chicken. Sprinkle on the cheese. Drizzle dressing. Pair with a buttered whole grain English muffin w/ garlic. Last, but not least, ENJOY!
