Air Fried Kickin’ Carrots

Probably like many of you, I have an air-fryer and I love it. What started out as a tool for frozen food items, toast, etc., is now my number one kitchen cooking tool for veggies!

When working with kids and adults, I often hear about foods, specifically veggies, that maybe they don’t care for. A lot of times it has to do with texture and/or lack of flavor. I always encourage them to give these foods another try and change up the cooking method. If you envision bland, mushy veggies from your childhood, of course those foods don’t jump out at you as something to add to your plate. Try roasted, baked, air-fried, grilled or sautéed cooking methods instead!

For me, this food was carrots. I have always enjoyed the crunch and flavor of raw carrots, but no thanks on any style of cooked carrots… Until I changed up the cooking method. I love to use my air fryer for broccoli, zucchini, potatoes, etc. so why not venture out on carrots! It was a win and is now an easy side I can pair with almost any dish! Take note- with the cayenne pepper, these have quite the kick! Don’t hesitate to change it up to fit your preferred flavor profile.

Air Fried Kickin’ Carrots

Ingredients

  • 6-7 medium-large carrots

  • 1 T olive oil or mild flavored oil of choice

  • Seasonings to taste: salt, pepper, garlic powder, cayenne pepper*

Directions

  • Wash, trim top and bottom, and peel all carrots. I prefer cutting the carrot length-wise into quarters and then chopping into 1 to 2-inch pieces. Feel free to keep it simple and just dice into circles if thats easier!

  • Place carrots in a bowl and add oil and seasonings. Toss until well coated.

  • Transfer onto your air frying rack and air fry at 400 degrees for about 15 minutes or until desired tenderness/crispness is achieved. Garnish with fresh cilantro or parsley for an added flare.

  • Pair with your favorite entree and enjoy!

*The cayenne pepper brings the heat on these carrots! If you don’t love spice feel free to omit.
