Let's Brunch! Raspberry Greek Yogurt Waffles

Nothing beats a plateful of delicious waffles on weekends! Ever since I was a child, I’ve enjoyed our family tradition of gathering together for weekend breakfast. Whether it is a new pancake or waffle recipe, we always like to find new ways to incorporate various foods, flavors, and different ingredients into our food. These delicious waffles are a protein-packed twist on the traditional waffle recipe featuring these powerful ingredients:

  • Greek Yogurt: Has a high protein content and is rich in probiotics to help with immune and digestive health.

  • Oats: Provide both soluble and insoluble fibers and are a great breakfast ingredient to keep you full for longer.

  • Raspberries (or other berries): Contains antioxidants, vitamins such as Vitamin C, and minerals.

This recipe should take at most 20 minutes to make with a quick and easy cleanup, so if you have kids, this is an excellent recipe for them to help with!

Ingredients

  • 2-cups old-fashioned oats (gluten-free if needed)

    1. ¼-cup milk of choice (e.g., almond milk, oat milk, cow’s milk)

    2. ½-cup Greek yogurt, plain or vanilla flavored

    3. 1½-teaspoons of vanilla extract

    4. 2-eggs

    5. One medium-ripe banana

    6. ½-cup raspberries (whole or mashed)

    7. One teaspoon cinnamon

    8. One teaspoon of baking powder

    9. Sprinkle of salt (optional)

Directions

  1. Preheat the waffle iron.

  2. Add all ingredients except raspberries to a blender and blend on high until well combined and smooth.

  3. Unplug the blender and gently fold in mashed raspberries with a spatula.

  4. Spray the waffle iron with nonstick cooking spray.

  5. Pour batter onto the surface and cook until golden brown. Enjoy your favorite toppings!

Optional toppings: almond/peanut butter, honey, maple syrup, Greek berry yogurt, or fresh fruit
