Breakfast Banana Split
One of the best parts of my job is learning from the clients and families I get to work with. They are always sharing fun recipe ideas, grocery shopping tips that work for them, food products they love, etc.
Just last week a client shared with me a fun summer treat her kids love, breakfast banana splits. Don’t let the word breakfast fool you, these banana splits would be a perfect snack or treat any time you are looking for a quick and refreshing idea. It sounded delicious, so of course I had to give it a try.
With the Greek yogurt and peanut butter, it provides a great source of protein while the fruit and granola give it a perfectly sweet crunch. This accomplishes the protein + carbohydrate set-up we recommend for meals and snacks.
The best part of this recipe… you can’t mess it up! Any fruit or toppings that you have on hand can be used, which makes it customizable, but also a perfect recipe for younger kids to use to get involved in the kitchen. As you can see below, it was a hit with my family and something I have already replicated several times!
Breakfast Banana Split
Total Time: 5-10 minutes
Serves: 1
Ingredients:
1 Banana
1-2 T peanut butter (I used crunchy)
2-3 oz Greek yogurt (any flavor works, I used coconut)
Fruit of your choice, diced
1 T granola
Directions:
Slice the banana lengthwise and place in a bowl.
In a microwave safe dish, heat the peanut butter in the microwave for 30 seconds to 1 minute depending on the amount you choose. Drizzle over the banana.
Spoon the Greek yogurt on top and place the fruit of your choice all over. Sprinkle with granola.
Enjoy! With a cherry on top!
