Fro-No-Yo Banana Bowl

This is a super easy and quick recipe that calls for minimal skills in the kitchen. If you are a fan of smoothie bowls and/or yogurt parfaits, this recipe combines your loved dishes into one! Not only is it easy to create, it is also delicious and “phone eats first” worthy.    

Preparation time:

15 minutes once bananas are frozen 

Cooking time: 

5 minutes

Total time: 

20 minutes

Yields: 

1 bowl (serving size)

Cookware needed: Blender; tablespoon measuring utensil; ⅓ cup measuring cup; knife; cutting board

 Ingredients 

  • 2 Ripened and frozen bananas

  • ¼ green apple

  • 4 strawberries

  • ½ cup blueberries

  • 2 T PB2 Powder

  • ⅓ cup protein granola (brand used in example picture is KIND Peanut Butter Clusters)

  • Ice cubes to preference (aids in maintaining frozen mixture)

  • Optional: Sprinkle a serving of nuts high in protein such as walnuts or almonds on the top of the bowl to add additional protein content

  • Optional: A dash of almond milk to pre-blended bananas to help with blending

 

Instructions

To freeze the bananas:

  1. Unpeel 2 ripe bananas and place them into an airtight bag or container. Place the bag or container of bananas in the freezer and let it remain in there for at least 2 hours, or until the bananas are frozen hard. 

Prepare the fresh fruits: 

  1. Wash off your apple, strawberries, and blueberries with running water. 

  2. After drying the produce, use your knife and cutting board to begin chopping the fruits into smaller, bite-sized pieces. 

Side note: For the green apple, about 3 slices chopped into smaller pieces is enough to meet the ingredient need. For the strawberries, cut each medium-sized strawberry into about 4 total pieces. Good news is that blueberries are good to go after washing! No cutting required for these. 

Prepare the bowl: 

  1. Retrieve the bananas from the freezer. Remove each banana from the bag or container and place them on the cutting board. Cut the bananas into ~1 ½ inch slices. Then, place the slices into the blender. 

  2. Begin blending the frozen banana slices. If you wish to add a little bit of almond milk, do so at this time. However, note that the bananas will provide plenty of water to ease with the blending process. Therefore, use the milk sparingly. 

  3. After about 1 minute, or when you notice that the consistency of the content inside the blender has become a smooth, thick, and frozen texture, pour the content into a serving bowl. (Side note: Depending on how frozen the bananas are at the time you begin blending, the consistency may result in a product that is more liquid than what is expected. One tactic to aid in recovering the frozen consistency is to utilize ice cubes and combine them with the blended bananas already in the blender.) 

  4. Using the prepared fresh fruit, sprinkle it on top of the blended banana mix. 

  5. Finally, sprinkle in the granola. If you wish to add additional toppings, such as nuts, add them at this time, too. Then, enjoy!
