Tofu Salad Tostadas

As the summer approaches with its scorching heat, I love creating a nutritious and refreshing meal! This recipe is packed with veggies, healthy fats, and plant-based protein making it a great addition to your repertoire of “Power Plates,” which are loved and endorsed at Lemond Nutrition.

This recipe is courtesy of a lovely church family who always shares delicious and healthy meals during our church’s potluck. I’ve given it my own twist, but it is still nothing short of delicious! Plus, it is quick and easy to throw together, requiring no cooking whatsoever! As an intern, I am always busy with a never-ending to-do list, so I often resort to quick and easy recipes such as this one! It is a filling and satisfying plant-based recipe that’ll keep you going until your next meal. Make sure to give it a try this summer.



Tofu Salad Tostadas

·      Total time: 20 minutes

·      Serves: 3-4 people

Ingredients:

·      Mission Estilo Casero Tostadas pack of 22

·      1 lb Firm Tofu

·      2 ripe medium avocados, diced

·      1 small red onion, diced

·      8 mini pointed peppers (red, orange, yellow), diced

·      1/2 cup cilantro, minced

·      1 garlic clove, minced

·      Juice of 3 limes

·      ½ tsp salt

·      1/8 tsp black pepper

·      Cherry tomatoes for garnish

·      Optional: jalapeno to spice it up

Directions

1. Wash and dry all produce

2. Drain the tofu and place it into a medium-sized mixing bowl. For a quick and easy method, squeeze the tofu with your hands to get rid of the excess water using a fine mesh strainer as a base to catch any pieces that might fall out.

3. Dice the avocado, red onion, mini pointed peppers, mince the cilantro and garlic, and place into medium-sized mixing bowl along with the tofu.

4. Add in seasoning and lime juice.

5. Mix well, serve over tostadas, garnish with cherry tomatoes, and enjoy!
