No-Bake Avalanche Cookies: Perfect For Getting Kids In The Kitchen

I don’t know what it is like in your house, but in mine, the kitchen is the place to be! When we are cooking, all three of my boys always want a job. Whether it is slicing fruit, peeling hard-boiled eggs, making sandwiches, or helping whip up a tasty treat- they love to be involved. As Valentine’s Day is quickly approaching I thought it would be fun to showcase one of our favorite no-bake treats and the best part- it is totally kid friendly and a perfect way to engage kids in the kitchen.

At Lemond Nutrition, we truly believe and put into practice “all foods fit.” As a mom myself, I work to not make a big deal about any one food or certain food group. We don’t ALWAYS eat apples, just like we don’t ALWAYS eat no-bake cookies. Kids and adults both benefit when we take time to embrace and incorporate all foods, enjoying the moments and relationships surrounding these foods!


Avalanche No-Bake Cookies

(makes about 20-24 cookies)

Ingredients

  • 2 cups Rice Krispie cereal

  • 1/2 cup mini marshmallows (we tend to go closer to a cup :) )

  • 1/2 cup peanut butter (any nut butter would work)

  • 1 bag (12 oz) white chocolate chips

Instructions

  • Line a baking sheet with parchment or wax paper.

  • Pour Rice Krispies and marshmallows into a medium size mixing bowl.

  • Combine white chocolate chips and peanut butter in a microwave safe bowl. Microwave for about 45 secons. Stir and repeat process in 30 second intervals until melted and mixed together.

  • Pour peanut butter and chocolate mixture over the Rice Krispies and marshmallows. Stir well until fully combined.

  • Drop a small spoon-full of mixture onto parchment paper. Allow to cool in fridge for about 30 minutes and then store in an air-tight container in the fridge or at room temperature.

  • Enjoy!
