Hydrating Watermelon Cucumber Salad

July is National Watermelon Month and for good reason!  Watermelon is delicious this time of year, and there’s nothing better than a cold, refreshing bite of watermelon on a 100+ degree day.  You can’t go wrong with just plain watermelon, but if I’m feeling like mixing it up a little, this watermelon cucumber salad is one of my summer favorites.  It has a tasty combo of textures and flavors, can help keep you hydrated and is a good source of vitamin C… not to mention it is beautiful and colorful.  Watermelon contains natural sugars, potassium, magnesium and high fluid content, which makes it a wonderful hydration food. Watermelon Cucumber Salad

Ingredients – serves 4:

  • 4 cups watermelon, cubed

  • 1 English cucumber, sliced and quartered

  • ½ cup feta cheese, crumbled

  • 2 Tbsp olive oil

  • 1 Tbsp mint, chopped

  • 1-2 limes, juiced

  • Salt and pepper, to taste

Directions:

  1. Combine watermelon, cucumber, and feta cheese in a large bowl.  Stir ingredients gently to prevent the watermelon from losing its shape.

  2. In a small mason jar, combine olive oil, mint, lime juice, and salt and pepper and shake until combined.  Pour mixture into the bowl with the watermelon, cucumber, and feta, and again stir gently.

  3. Taste test and adjust if needed.  Enjoy!
