Fast and Full of Flavor | Egg Roll In A Bowl

2025 is in full swing and if I am honest, I have had to work a bit harder to settle into a rhythm this year than in years past. Can you relate? When things seem a bit busier or unsettled with juggling the needs of life, I try to pause and reflect on the tasks at hand and simplify processes where able. One thing we talk about a lot at Lemond Nutrition, and if we have ever worked together, you will hear me discuss redefining fast food. Getting a meal on the table for our family, running to a restaurant for take out or swinging through a drive through all take planning and effort, and each option may certainly serve a role throughout the week depending on the circumstances. However, when cooking at home may feel daunting, I love to empower my clients with simple and tasty meals that are FAST and full of flavor, often put on the table faster than loading up in the car, driving across town, and back home again.

My kids rank meals based on whether they meet the “family favorite” criteria or not. This recipe, Egg Roll in a Bowl, is hands down deserving of that label! With 4 of the 5 food groups in one bowl, the flavors and textures are hard to beat any time, but especially on a busy week night.

  • 1 lb. lean ground pork (can use beef or chicken)

  • 4 green onions thinly sliced, whites and greens separated

  • 2 tsp minced/grated ginger

  • 4 cloves minced garlic

  • 16+ oz coleslaw mix or shredded cabbage

  • 3 eggs cracked into mix

  • 3 Tbsp soy sauce or liquid aminos

  • 1 tsp sesame oil or to taste

  • Chopped cilantro or green onion for garnish

  • Sesame seeds for garnish


  1. In a 10-inch skillet over medium-high heat, brown the ground chicken or pork, breaking it up with a wooden spoon. Season w/ salt and pepper to taste. Drain any fat.

  2. Stir in the whites of the green onions, ginger, garlic, and coleslaw mix. Cook, stirring occasionally, until the coleslaw becomes tender, about 4 minutes.

  3. Add in the eggs and stir in until cooked.

  4. Stir in soy sauce and sesame oil and cook for 1 minute more.

  5. Divide into bowls and garnish with greens of green onions, and sesame seeds. My family prefers to serve it over jasmine or brown rice.

  6. For an extra kick, top with sriracha and/or Japanese BBQ sauce.
