Breakfast Blueberry Banana Mug Muffin
Wake up with a sweet tooth but want to make sure you get a balanced breakfast before the day? This microwaveable mug muffin is for you! It is quick, nutrient dense, and delicious – perfect for any time of the year and highly variable. This recipe is macronutrient balanced, with protein coming from the egg, carbohydrates coming from the banana, and fat coming from the almond flour (and any toppings)!
Ingredients:
• 1 egg
• 1 banana, mashed
• ¼ cup almond flour
• ½ tsp cinnamon
• ¼ tsp baking powder
• Pinch of sea salt
• 2 tbsp unsweet vanilla almond milk
• Handful blueberries
• Optional: scoop of collagen
Instructions:
1. Grab a mug and use a non-stick spray on the inside
2. Put the ripe banana in the mug and mash it
3. Crack 1 egg over the mashed banana and whisk
4. Add the almond milk and thoroughly mix all wet ingredients together 5. Add all the dry ingredients (almond flour, cinnamon, baking powder, sea salt, and optional collagen powder) and mix
6. Lightly fold in the blueberries
7. Microwave for 6 minutes
8. Carefully remove the mug from the microwave and let cool for 1-2 minutes, then place in a bowl to serve
9. Top how you’d like! (Recommendations: more fresh black berries, sliced banana, sliced almonds, almond butter, granola, maple syrup, bea pollen, hemp hearts, etc.)
