Banana Pops

Fall is near, but here in Texas the temperture reamins a bit toasty! These refreshing banana pops are a delicious way to cool down while also giving your body a nourishing boost!  Bananas provide potassium, fiber, and naturally occurring carbs for energy, while the yogurt coating provides calcium and vitamin D for strong bones, and protein to keep kids and adults full and satisfied.  Toppings can be just about anything that will stick to the yogurt!  From nuts like pecans or pistachios, to a nut butter (just microwave for ~20 seconds to get a texture that will drizzle), to crushed Oreos or sprinkles, to chia seeds for a fiber-packed “sprinkle.”

This recipe is also a great way to get young kids helping in the kitchen.  Little chefs can peel and cut the bananas with adult supervision, insert the popsicle stick, dip them in the yogurt, and add their favorite toppings.  Getting kids involved in simple kitchen tasks can help build confidence, and make them more interested and excited to try new foods!  Give it a try with your family and let us know what you think!

Ingredients:

  • Bananas

  • Greek yogurt, vanilla flavored

  • Toppings: chopped pecans or pistachios, peanut butter, sprinkles, chia seeds, crushed Oreo, and/or melted chocolate

  • Popsicle sticks

Instructions:

  1. Line a baking sheet with a piece of wax paper.

  2. Cut the bananas in half or thirds depending on the size of your banana and desired pop size, and peel. Insert your popsicle stick into the banana.

  3. Dip the banana into the yogurt or use a spoon or knife to spread the yogurt onto the banana.

  4. Sprinkle the topping of your choosing onto the banana and then place the banana onto the wax paper lined baking sheet.

  5. Place the sheet into the freezer for ~2 hours to let the bananas set up, then place in a storage container until you’re ready to eat them!
