Summer Favorites

This summer has been a blur so far… Do you feel the same? I’ve been trying hard to make time for the things that really matter, which has left less time for my usual chores, errands, and meal prep. As a result, I’ve discovered several time savers and general products that I’ve loved. Here are some things that have made my life easier so far this summer, and that I hope will make yours easier, too!

  1. Freeze-dried fruit. I personally much prefer this to dried fruit. It has a satisfying crunch and doesn’t leave my hands (or my toddler’s) sticky. It also keeps longer than fresh fruit and is ready to eat, no washing or cutting required. The favorite in our house at the moment is freeze-dried cinnamon apples.

  2. This little lunchbox with a built-in ice pack. My son and I like to venture to the park in the morning, and playing in the heat inevitably makes for a hangry toddler. A warm snack that’s been sitting in a hot stroller has not been cutting it. The solution? This lunchbox! They also have a smaller snack version.

  3. Salsa chicken. Maybe the rest of the world already knows this exists, but I did not! You put 2 pounds of chicken breasts plus 2 cups of salsa in the slow cooker (I’d suggest low sodium if possible – it makes it a little less salty) and cook on low for 6 hours. This results in tender, flavorful chicken that can be added to tacos, burritos, or bowls.

  4. Cold foam creamer. Think whipped cream, but a slightly thinner consistency. This has been changing my iced coffee game in the morning, and it’s quicker and less expensive than a trip to Starbucks.

  5. Using the local library. This is clearly not food related, but it has helped contribute to my self-care. In addition to saving money by not purchasing a book, I love thinking about how many people have enjoyed that same book before I did.
