Smash Tacos

If you’re looking for an easy, nutritious dinner idea to add to the rotation, smash tacos are it!  They’re quick, customizable, and satisfying, and can check all the nutritional boxes to build a great power plate meal.

The basic idea is simple – take a small amount of seasoned ground chicken, spread it onto a tortilla, and cook it meat-side down in a skillet for 2-3 minutes (or until the temperature reaches 165°).  Then flip and cook another 1-2 minutes (until the tortilla is crispy), remove the taco, and add your toppings to the side with the meat. Viola!  Your smash taco is done.  From there, you can round out your plate with a side salad, fresh fruit, or raw veggies with a dip to increase the color and nutritional content of your plate.  That’s it!  You’ve made a delicious, realistic, and nutritious dinner.
