Beat the Hustle with Egg Bites
Mornings are anything but boring in a house with an infant and a 5-year-old. In an effort to make things run more smoothly in the mornings and limit some of the hustle, I have found planning ahead to be key. Through a few simple steps, I feel like I can set a better tone for not only my day, but my family’s mornings, as well. One of the ways I implement this is trying out new breakfast ideas that I can make in advance. Lately, one of our go-to breakfast options are my spin on the infamous Starbucks egg bites. The eggs are a great source of protein and are a tasty item that everyone in our home enjoys. Check out the easy recipe below!
This recipe will make 6 muffin cup size egg bites.
You will need:
Muffin pan (minimum of 6 muffin cups)
Non-stick cooking spray
2/3 cup Fat free Cottage Cheese
6 eggs
Salt to taste
Pepper to taste
Small Pyrex (filled 2/3 full of water only)
Toothpick or Knife (to check doneness)
Toppings/Mix-ins of choice to consider:
spinach
various cheeses
mushrooms
roasted red peppers
bacon (turkey, pork)
sausage (turkey, chicken, beef, pork)
Directions:
Preheat oven to 350 degrees.
Place a small Pyrex 2/3 full of water on the bottom rack of your oven.
In a blender, crack 6 large eggs and add ~2/3 cup cottage cheese. Blend until well mixed – a few lumps are okay.
In a lightly greased or non-stick muffin pan, add equal amounts of the mixture to each cup. Fill about 2/3 full to the top.
Sprinkle pepper and salt to taste to each cup.
Add in toppings/mix-ins of choice to each cup and give a quick stir with a spoon.
Add muffin pan to the oven on the top shelf, above your Pyrex with water.
Cook for 20-30 minutes or until done. Time will vary depending on the oven and also your mix-in options. Check the muffin cups the same way you do cake – the knife or toothpick should be placed in the center of each and come out clean.
**Pair with your grain of choice and a side of fruit. ENJOY!! Store any leftovers in an airtight container. Aim to use these within the next 48 hours.
As you can see, there are multiple variations to try. One of the things I like most about these are that my 5-year-old is able to help with the preparation, which saves me a step and also helps build his confidence around food. I will often have him help push the blender button, pour the egg mixture or add his favorite “toppins” in and give them a quick stir before popping them in the oven.
