On the Go Poke Bowl

As we settle into warmer weather, I love leaning into fresh options that I may not normally have during the winter months. One of my favorite dishes to make for lunch is a poke bowl. I love the versatility of this dish and the ease of preparation for something that boasts such great flavor. If you love sushi like I do, you will love this dish! As a mom, I love allowing the opportunity for my little one to explore a variety of textures and this dish does just that. This is also a great dish to have your little get involved with in the kitchen – mixing or chopping as appropriate.

Poke Bowl

Ingredients | Makes 2 servings

1 package frozen shelled edamame

2 handful Cabbage slaw mix

4 light shakes (or to your preference) Everything but the Bagel Seasoning

1 small avocado (diced)

Drizzle Sriracha Mayo

2-4 Snacking Cucumbers, chopped

6-8 oz Ready to eat Smoked Salmon, sliced into small strips/pieces 

**You will need 2 lunch containers or bowls, as this creates 2 servings.

Directions

Microwave steamable bag of frozen edamame as directed on package. Once cool, place ~1/3 of the bag (2/3 total – throw the rest on a salad or save for a snack later) in each of the lunch containers. On top, place 1 handful of cabbage slaw. Split the cucumber and avocado evenly into the two bowls. Add your smoked salmon on top. Drizzle with your Sriracha Mayo. Top with your Everything but the Bagel Seasoning seasoning.  


As I mentioned, this dish is so customizable. Edamame can be swapped for sticky rice or you can add the rice and keep both. You can also add some seaweed crisps or French fried onions for extra flair. You could also add a low sodium soy sauce, but I find the smoked salmon to provide just the right amount of saltiness.
