Chinese Food At Home | Jalapeno Chicken
This recipe is a spin-off of my favorite Chinese take-out dish. Because I make it at home, I have more control in catering to my general health needs, including making the dish lower in sodium, saturated fats, and carbohydrates, but not sacrificing the flavor! This meal is a weekly staple in our home and comes together very quickly on busy nights after work and school.
Ingredients:
1.5 lbs boneless, skinless chicken breast, chopped into bite-sized pieces
½ tsp salt
1 tsp pepper
1 tsp garlic powder
2 tbsp avocado oil
2 fresh jalapenos, sliced
½ white onion, sliced
3 cloves garlic, minced
⅓ cup low sodium soy sauce
⅓ cup water
⅓ cup brown sugar
1 tbsp cornstarch
1 cup brown rice
Instructions:
In a large pan heat the avocado oil over medium high heat. Add chicken breast and season with salt, pepper, and garlic powder.
Cook until browned and cook through, about 10 minutes.
Once cooked, remove and add in the onion and jalapeno. Saute for 5-7 minutes. Add in the garlic and cook 2-3 more minutes.
Combine soy sauce, water, and brown sugar in a separate bowl and mix until well combined to make the sauce.
Once the vegetables are cooked, add the chicken and sauce mixture to the pan. Turn to medium low heat and cook for 5 minutes.
Add the cornstarch and stir until well incorporated and the sauce has thickened. Serve over brown rice.
