This is one of my favorite recipes because it is delicious, quick to prepare, and is so versatile! Instead of opting for more takeout, try this simple recipe for a speedy weeknight dinner... Redefine fast food! You will find that it is great for leftovers and is easy to incorporate into other meals throughout the week.
Cilantro Lime Chicken
½ cup chicken broth
¼ cup olive oil
¼ cup lime juice (I prefer fresh, but store bought also works well)
1-4.5oz can chopped green chiles
4 cloves garlic, minced
1 jalapeno, chopped (if you prefer more spice leave the seeds in)
1-2 tsp salt
2 tsp cumin
1 tsp paprika
1 tsp pepper
2 lb boneless skinless chicken breasts
½ cup cilantro, chopped
Place the chicken broth, olive oil, lime juice, green chiles, garlic, jalapeno, salt, cumin, paprika and pepper into a blender (or food processor). Blend until the mixture is smooth and well incorporated.
Lay the chicken in the crock pot and pour the prepared sauce over the chicken.
Cover and cook on low for 8 hours or on high for 4 hours.
Shred the chicken. Add the chopped cilantro and toss.
Notes: This recipe can also be made using an Instant Pot or pressure cooker. Create the sauce per the above directions, place chicken in pressure cooker, top with sauce, and cook on high for about 10 minutes. Allow pressure to release naturally for 5 minutes and then quick release the remaining pressure. Then continue with above steps.
