Pão de queijo (Brazilian cheese bread) is a popular snack and breakfast food in Brazil. This fun treat also pairs well with soups and stews and is best served fresh out of the oven. While Pão de Queijo is usually gluten free, it is not typically vegan as it contains dairy and egg. With a few modifications, this recipe allows all members of the Lemond Nutrition community to enjoy.
Pão de Queijo: Brazilian Cheese Bread
2 cups tapioca starch
1 cup cooked Russet potatoes
1 teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon black pepper
¼ teaspoon ground turmeric
2 tablespoons nutritional yeast
½ cup boiling water
1/3 cup olive oil
3 tablespoons non-dairy milk
1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
2. Boil or microwave potato until it is soft and can be mashed with a fork.
3. Combine tapioca starch, salt, garlic powder, onion powder, black pepper and nutritional yeast in a large bowl.
4. In a separate bowl, combine water, olive oil, and non-dairy milk. Add liquid to tapioca mixture and stir.
5. Add cooked potato and stir until ingredients are well incorporated.
6. Using your hands, knead the dough until smooth. Roll into balls and bake for 30-35 minutes.
7. Allow bread to cool a few minutes before eating.
