
Going Green Smoothie
Ingredients:
3-4 handfuls raw spinach
1 Tbsp chia seeds, whole
1 Tbsp flax seeds, ground
1 cup soymilk
2 Medjool dates, pitted
½ medium banana (optional)
A handful of ice for blending
Directions:
1. Add ice, soymilk, banana, dates, flax seeds, chia seeds, and spinach to a blender.
2. Blend until smooth. Store overnight or drink immediately.
Going Green at Breakfast
I totally get it—when it comes to eating a good breakfast on a hectic, weekday morning, it’s usually the last thing on my mind. For years, I’ve been the type of person to just grab some coffee and run out of the door…until I found myself extremely hungry before it was even close to lunchtime. This lead to eating all of my lunch before lunchtime, and sure enough, I was hungry again before I even left work.
Until one day, I just happened to come across a beautiful, vibrant green smoothie after scrolling through my Instagram feed. After making it once, I was sold. I was bringing this smoothie (or some version of it) to work almost every day. Not only does it taste great, but it also is an excellent source of omega 3 fatty acids, fiber, vitamin A, potassium, and calcium.
For those of you who need a quick and nutritious breakfast much like I did, this one is for you!
