It looks like cooler temperatures are finally in our near future here in Texas. That means it's officially soup season! Let's be real though, soup can be enjoyed all year round. I love getting creative with different kinds of soup, chili, and stew around this time of year. I recently tried this recipe and it was simple AND delicious! This recipe also gave me the opportunity to explore new ways to use one of my favorite kitchen toys, the Instant Pot. I enjoyed this soup over basmati rice and it was fantastic, but I am sure it could be served in several different ways. You could serve it over brown rice, quinoa, pasta, or pair it with warm pita bread.
I stumbled upon this recipe from Half Baked Harvest's website. If you haven't tried one of her recipes, I suggest you do! I have yet to find one that isn't superb.

Haley grew up in New Braunfels, Texas spending most of her time playing volleyball, hanging at the river, or spending time with friends and family. When she was a senior in high school, she began to work at a local natural food store where she developed an interest in health and wellness. She pursued this passion and graduated from Texas State University with a BS in Food and Nutrition. Haley completed her dietetic internship with Be Well Solutions, a corporate wellness company based in Ohio.
Haley currently lives in Plano, Texas. When she is not working, she spends time with friends, hikes with her dog, and finds joy in movement at Camp Gladiator.
Haley’s passion for helping others find peace with food motivates her to connect with clients, develop achievable goals, and provide support throughout their wellness journey. Haley serves the patients of Lemond Nutrition at both our Plano and Rockwall offices.
