A Festive Fourth With Summer Berries!


Fourth of July may look a little different this year but that doesn’t mean our food can’t still be festive! In this post you will find a couple of simple recipes to help you celebrate.

At Lemond Nutrition we like to emphasize adding nutritious foods to our plates and recipes versus taking foods away, we call this an “all foods fit” mentality. The fruit pizza recipe I will be sharing with you is just that! This recipe has been part of my summer festivities for many years. It is versatile and fun and you can also get really creative with it. It is sure to be a crowd pleaser! 

Fourth of July Fruit Pizza

  • Serves: 8-12
  • Total Time: ~60 minutes


  • Sugar cookie crust:
    1 ¼ cups of flour (I used King Author Unbleached Flour)
    ¼ tsp baking powder
    ¼ tsp salt
    ¾ cup sugar
    ½ cup butter, softened
    1 tsp vanilla extract
    1 large egg
  • Cream Cheese Frosting:
    8 oz cream cheese, softened (I used the 1/3 reduced fat option)
    ¼ cup sugar
    1 tsp vanilla

    Strawberries, rinsed and sliced
    Blueberries, rinsed


  1. Make the crust by mixing the butter, sugar, egg, and vanilla until well combined. Next add flour, baking powder, and salt. Mix until combined. Chill the dough for at least 30 minutes.
  2. Preheat the oven to 350 degrees. After the dough is chilled press it into a greased 9x13 cookie sheet. Bake for 12-15 minutes then allow it to cool completely.
  3. Make the cream cheese frosting using a hand mixer to mix the cream cheese, sugar, and vanilla until smooth and creamy. Spread the frosting over the crust after making sure it is completely cool.
  4. Now the fun part! Add the fruit toppings. I decorated this fruit pizza with strawberries and blueberries to resemble the American Flag, but feel free to have fun with this and make your own creation- this is also a good time to get the kids involved!

    Recipe Notes: Feel free to make this recipe your own by incorporating different kinds of fruit. You can make substitutions to the crust by using whole wheat all-purpose flour or a gluten-free flour if allergies are a concern. Also, if you are crunched on time you can use prepared sugar cookie dough as the crust.

If you are super short on time and need something that is quick to throw together this one is for you! Of course, still sticking to the Fourth of July theme, I created this super simple fruit tray featuring summer berries.

Fourth Of July Fruit Tray


  • 1 lb carton of strawberries, rinsed and sliced in half

    8 oz carton of blueberries, rinsed

    1 package of white chocolate or yogurt covered pretzels


I assembled the fruit tray by alternating strawberries, blueberries, and pretzels in rows. Feel free to get creative and make your own design!
